<h3>A Gourmet Peanut Butter Cheesecake…Mmmmmmm!!!</h3>
<p><strong>Crust:</strong></p>
<ul>
<li>6 tablespoons unsalted butter</li>
<li>1 ½ cups graham cracker crumbs</li>
<li>2 tablespoons sugar</li>
<li>Pinch fine salt</li>
</ul>
<p><strong>Filling:</strong></p>
<ul>
<li>2 pounds cream cheese at room temperature</li>
<li>1 ¼ cups sugar</li>
<li>¼ cup sour cream</li>
<li>½ cup peanut butter</li>
<li>6 large eggs, lightly beaten</li>
<li>1 tablespoons vanilla paste or extract</li>
<li>2 cups chopped Pioneer Candy Fudge</li>
</ul>
<p><strong>Directions:</strong></p>
<p>Position a rack in the middle of the oven and preheat to 325 degrees F.</p>
<p>For the crust: Combine the graham cracker crumbs, sugar and salt in a medium bowl.  Melt the butter, covered in the microwave or in a saucepan over the stove on medium heat.  Brush a 9-inch springform pan with some of the butter.  Stir the remaining butter together with the crumb mixture.  Press the crumb mixture evenly over the bottom of the pan.  Bake until golden brown, 15 to 18 minutes.  Allow the crust to cool.  Wrap the bottom and up the sides of the pan with foil and put in a roasting pan.</p>
<p>For the filling: Using an electric mixer beat the cream cheese on medium speed until smooth.  Add sugar and beat until light and fluffy.  Slowly beat in the sour cream, peanut butter, eggs, and vanilla.  By hand, fold in the Pioneer Candy Fudge making sure to separate the chopped pieces when adding to the mixture.</p>
<p>Bring a medium saucepan or kettle of water to a boil.  Gently place the roasting pan in the oven.  Pour in enough hot water to come about halfway up the side of the springform pan.  Bake the cheesecake for 1 hour and 10 minutes until the outside of the cake sets but the center is still loose.</p>
<p>Turn the oven off, cook the cheesecake in the residual heat in the oven for 1 hour.  Remove the cheesecake from the roasting pan to a rack.  Run a knife around the edges and cool to room temperature.  Cover and refrigerate at least 8 hours or overnight.</p>
<p>Bring the cheesecake to room temperature 20 minutes before serving.  Remove the springform ring.  Dip a knife in warm water, wipe dry before slicing each piece.  Serve with a topping of crumbled Pioneer Candy toffee, if desired.</p>

			<content:encoded><![CDATA[<p>Speaking with my dad over this past Father’s Day got me to thinking about when I was growing up and the conversations my father and I would have after dinner – usually over a chocolate fudge brownie smothered in ice cream and chocolate fudge sauce. Teaching me the small yet influential life lessons that managed to stay with me to this very day.</p>
<p>It didn’t seem like much at the time, but when I look back and the fact that I remember these small conversations must mean that they have had some profound impact on me. The craziest thing about it is, that it’s the times that I’m eating a fudge brownie, chocolate chip cookie or a big bowl of ice cream that these emotions come to surface…It’s the nostalgic emotion of tying dessert and sweets in general to these father-son moments.</p>
<p>Don’t get me wrong there was more to my father’s and mine relationship than these conversations held over chocolate desserts. There were the times that after my soccer games or baseball games that we would be driving home and we would talk about how I played and the game, but these are the expected conversations that every father and son have during the course of our adolescence.</p>
<p>It makes wonder if he knew what he was doing or was he simply being a good father by wanting to spend quality time with his son?</p>
<p>To be completely honest and blunt, I don’t care. For whatever the reason behind these dessert time conversations is of no importance to me, the fact that they occurred is all I care about.</p>
<p>In any event, I will always cherish those conversations and every time I sit down for a bowl of ice cream or order a slice of chocolate fudge cheesecake I will eat it with a smile as I think about my father.</p>

<p><strong>Ingredients:</strong></p>
<ul>
<li>Soft butter, for greasing the pan</li>
<li>Flour, for dusting the buttered pan</li>
<li>4 large eggs</li>
<li>1 cup sugar, sifted</li>
<li>1 cup brown sugar, sifted</li>
<li>8 ounces melted butter</li>
<li>1 ¼ cups cocoa, sifted</li>
<li>2 teaspoons vanilla extract</li>
<li>½ cup flour, sifted</li>
<li>½ teaspoon kosher salt</li>
<li>8 oz Plain Chocolate Fudge from Pioneer Candy Co.</li>
</ul>
<p><strong>Directions:</strong></p>
<p>Preheat the oven to 300 degrees F.  Butter and flour an 8-inch square pan.</p>
<p>In a mixer fitted with a whisk attachment, beat the eggs at medium speed until fluffy and light yellow. Add both sugars. Add remaining ingredients, and mix to combine.</p>
<p>Fudge should be cut into small cubes and then chilled before mixing into brownie batter.<br />
Pour the batter into a greased and floured 8-inch square pan and bake for 45 minutes. Check for doneness with the tried-and-true toothpick method: a toothpick inserted into the center of the pan should come out clean. When it’s done, remove to a rack to cool. Resist the temptation to cut into it until it’s mostly cool.</p>

<p><strong>Ingredients:</strong></p>

<li>Nonstick cooking spray</li>
<li>2 teaspoons salt</li>
<li>1 ½ cups all-purpose flour</li>
<li>1 ½ sticks unsalted butter, softened</li>
<li>1 cup firmly packed dark brown sugar</li>
<li>1 cup granulated sugar</li>
<li>3 large eggs</li>
<li>1 tablespoon whole milk</li>
<li>2 teaspoons vanilla extract</li>
<li>½ cup creamy peanut butter</li>
<li>1 cup chopped Pioneer Milk or Dark Chocolate Almond Toffee</li>
<li>½ cup chocolate chips</li>
</ul>
<p><strong>Directions:</strong></p>
<p>Preheat the oven to 325 degrees F.</p>
<p>Line a 13 by 9-inch glass pan with parchment paper, leaving a 2-inch overhang and then spray with nonstick spray.</p>
<p>Whisk flour and salt together in a small bowl and set aside.</p>
<p>In a large bowl, using a hand held mixer, cream butter and both sugars together until light and fluffy.  Slowly add eggs, 1 at a time until thoroughly combined.  Add milk, vanilla extract, peanut butter, and chocolate chips and continue to mix.  Incorporate dry mixture into wet mixture in 3 separate additions.  Using a spatula, fold in Pioneer Toffee bits.</p>
<p>Pour batter into prepared pan.  Bake in the center rack of the oven for 20 minutes.  Remove when toothpick inserted in the center comes out clean.  Transfer to a wire rack and allow to cool completely.  When cool, use cookie cutters to create fun shapes.</p>
